Weekend Cooking: Pancakes

Today I am posting a recipes for pancakes. Now you may wonder why I would do so when pancakes is a pretty basic recipe, however I have only started making pancakes from scratch for the last year or so. Previous to that we used to buy the add-water-and-shake type prepared mixes which were fine, but obviously given how easy the pancake mix is to make from scratch it is better to do so.

The second reason for posting is so that on the odd occasion when I do decide to make pancakes, I have to hunt around wondering where the heck the recipe is, so by posting it here, I will only have to look on the blog to find it!

So here's the basic recipe for pancakes that I have been using. I can't remember where I originally found it.

Pancakes


2 cups self-raising flour
2 cups milk
2 eggs, lightly whisked
Dash of milk (extra)

1. Sift the flour into a large bowl.
2. Combine the eggs and milk in a separate bowl.
3. Pour the combined milk and egg mixture into the flour and stir with a wooden spoon until well combined.
4. If necessary, to make the batter a little smoother, add a dash of milk then using a whisk, beat until smooth and there are no more lumps.
5. Cover with plastic wrap and refrigerate for at least 30 minutes
6. Heat a frying pan on medium heat. Add a small amount of butter or spray the pan with a little cooking spray (we use butter). Using a half cup measure scoop batter and pour into the pan (this helps to ensure that your pancakes are all an even size). When air bubbles form, check the pancake by lifting slightly with a spatula. Turn when golden, and cook the other side. Set aside on a plate sat on a bowl of boiling water to keep warm.



Where I am looking for a little inspiration is in terms of toppings that people use on their pancakes.

When I am organised enough (or it is a special occasion) I really like to have fresh berries mixed with a sprinkling of caster sugar and then served with mascarpone cheese. When I am less organised I might have them with a squeeze of lemon juice and sprinkled with sugar, or even just spread with jam.

  1. I'm boring. I look at pancakes as an excuse to eat maple syrup! LOL. I'm bookmarking this page so I too no longer have to go scrambling to find a recipe.

  2. I do like to have pancakes with butter and syrup as Beth does, but I'm also a fan of peach pancakes (using fresh or frozen only). Those, all you do is add a little pat of butter to the top and enjoy. Mmmm... yum!

  3. We make pancakes all the time because it's basically my go-to dinner when I have nothing in the fridge! :) My favorite combination is sliced banana, slices of toasted almonds(or other nuts) and maple syrup. Yum.

  4. I'm with Candace...maple sugar all the way! But no butter.

    The boyfriend like peanut butter and maple syrup, which is total overkill in my opinion.

    When I was a kid, my mom would someones just put butter and sugar on top of our pancakes.

  6. Oeh I love pancakes!

    Let me see... I am quite creative with toppings. I like my pancakes with strawberry jam, but also with fruit (mainly in summer) like bananas or strawberries. A typical Dutch combination is apple and syrup.

    I also like savoury toppings sometimes. I like to spread a bit of garlic cream cheese on top and add some chopped fresh chives. That is my favourite savoury topping by far.

    1. I have been known to have savoury pancakes if we go out to a pancake restaurant, but I haven't ever done savoury pancakes at home.

  8. I like pancakes but never seem to get the hang of making them. I never get them light and fluffy or I burn them. I've all but given up!
    I just like butter on my pancakes, sometimes syrup.

    1. I never thought I would get the hang of them, but now I have, I wouldn't go back. Although I do think the boy would like to have a bottle of shake mix in the cupboard for when he comes home from school.

  9. I cook pancakes ALL the time for my girls. It's their favorite breakfast. Sunday morning pancakes all year round, but also days off from school, snow days, holidays, and even more often in the summer when there's no rush to go to school. Sometimes we have breakfast for dinner and then it's always pancakes with other stuff.

    I have been making pancakes from scratch for maybe 15 years now. At first I followed a recipe from a cookbook, but within a few months I made some short cuts in the recipe to make it my own and now no longer look at a recipe. I'm so proud of myself. LOL.

    Maple syrup is a must for pancakes for us. But ONLY pure maple syrup. Grade B preferably.

    Both girls like chocolate chips in their pancakes. Berries on the side.
    I love fresh or frozen blueberries in mine. I don't even defrost the blueberries.. just plop a few on top of the pancake just after I've poured it in the skillet.
    I also like sliced banana OR finely chopped apple and a dash of cinnamon cooked into my pancakes.

  10. My mother used to make them but I have never got into the habit - which is just as well considering my waist-non-line! Maybe I'll give them a go some time for a special treat. Have a super weekend.

  12. I prefer butter and syrup on my buttermilk pancakes and peanut butter on my oatmeal pancakes (the latter of which I chill and eat as a sandwich for a quick breakfast). I've included links, if you're interested. :)

  13. I love pancakes! Thanks for the recipe. I like blueberries on top the best! But strawberries are bad either. Have you ever had chocolate chip pancakes? Those are decadent! cheers http://www.thecuecard.com/
