Weekend Cooking: What I Baked in January

After a couple of months where I didn't really make a lot, January has been a back to baking month.

Here's what I made in January




Banana Bread - I started with something simple. Mainly because I had some overripe bananas to use. I did do a double batch so I need to remember that I have some in the freezer at some point. (recipe)




Persian Love Cake - We were going away for the weekend to visit friends, and I wanted to take something with us. I had bought this kit a couple of months ago and this seemed to be a good option. It was easy and delicious!




Chocolate Wattleseed Pavlova with Strawberry Gum Cream and Lemon Mytle Jam - This was another kit that I bought some time ago. I took this as dessert to a family dinner and it went down very well. I do have enough left to make another one which I will do at some point. It is the first time that I have made a chocolate pavlova and I loved thatit was flecked with little bits of chocolate. So good!




Lemon Syrup Cakes - This is one of my go to recipes, and I roll them out whenever we need picnic type food. This time I took them to the all day music event we went to last weekend.

Lamington Trifle - As soon as I saw this trifle mentioned on the Queen website, I knew that I was going to try to make it. It's a great excuse to use my new trifle bowl. It is a bit fiddly, a bit challenging in some ways, but there are definitely hacks that you could make to make it easier. I thought I would share the step by step build up of the trifle. Definitely will be making something inspired by this again.

Then another lamington sponge and topped with cream, lamington truffles and fresh strawberries

Monday - Pressure Cooker Spaghetti Bolognaise
Tuesday - Mexican Chicken and rice
Wednesday - Pork Chops, mashed potato, beans, gravy
Thursday - Spanish Tuna Pasta Bake
Friday - Out for dinner

  1. Your trifle looks delicious with the fruit, custard, and cake together. Having a trifle bowl leads to lots of treates, doesn't it?

  3. All of the bakes from the kits are wonderful, quite different from what one makes when baking from remembered favorites! Trifle is one thing I have yet to make, maybe when spring comes around in our area, right now we are deep in cold and snow.

    1. I used to do regular kits for that exact reason Melynda. It pushed me out of my comfort zone and the to try new things.
