Weekend Cooking: What I Baked (In My Kitchen) in April

The first Saturday of the month is when I share all the things that I baked in the previous month. I did manage to do some baking again this month. 






Chocolate Caramel Flan - We had guests coming for dinner early in April so I decided to revisit an old favourite recipe. Whilst it was delicious as usual, it didn't tip out of the tin as neatly as it usually does. i think it was because I used a premade caramel instead of making the caramel myself. I have posted about making this recipe before here.






Easter Celebration Cake - I wanted to challenge myself a little bit and try to make something that was a little bit pretty and I came across this recipe for an Easter Celebration Cake on the KitchenAid website. Whilst I have several different chocolate cake recipes, I wanted to make this one because I haven't made one before which had both sour cream and buttermilk in it. I tend to make tasty cakes rather than pretty cake but this one turned out pretty good!






Lazy Apple Pie Cake (Lenja Pita) - The April book for Lamb's Ear Cookbook club was a book called First, Cream the Butter and Sugar by Masterchef alumni Emilia Jackson. The first recipe I cooked from the book was this cake which is of Serbian origin. It is a layer of sponge, a layer of apples and then another layer of sponge. The hardest thing about this recipe is peeling and coring all the apples! You will be hearing more about this book for sure.



I bought two new cookbooks this month. I originally borrowed both of these books from the library but it was immediately knew I was going to buy them.




The first book was the aforementioned book. In this photo, you can see how many recipes I had earmarked to try. There's a lot. I went through and added all these pieces of paper to the library book, then bought it and had to transfer it to my copy. My problem with this book is trying to decide which one to make.




The second book I bought was Recipe Tin Eats: Dinner by Nagi Maehashi . We picked this book up from the library and I was flicking through it in the car. By the time we got home, my husband said we need to buy this book. And he was driving!

  9. How good is the Recipe Tin cookbook? I too borrowed it from the library but will have to purchase my own copy as there are so many recipes I want to try! The caramel flan and Easter cake sound right up my eat street and how good is an apple layer cake? I have a similar recipe for a traybake and agree, that the hardest part is preparing the apples!
